Two questions really.
I love shellfish, and mussels in particular, but it’s commonly believed that;
1) Mussels that don’t open when cooked can still be fully cooked and safe to eat, and,
2) Secondly, you should eat them only in months that have the letter ‘R’ in them.
Are both of the above correct, just one of them perhaps; or neither?

How do I know if eggs are fresh?
Maybe I’m being overly mistrusting or skeptical but I don’t trust the sell by dates on products.
After all, what’s to stop a company or a farm fudging the dates a little if they’ve had slow sales.
I seem to remember something about placing unbroken (of course) eggs in a bowl of water but I can’t recall what happens next, so please post and let me and others know too.
